Whne I was a child, my Mom always made sweet potatoes with loads of cinnamon and brown sugar, topped with raisins and marshmallows. And yes, that was actually a side item, not a dessert! Of course as kids, we loved it, and my kids love it when she fixes that today! But I am not much of a sweet eater, so my favorite dish as a child at Thanksgiving was that good old fashioned mashed potatoes. Hands down! So after finding Paleo/Primal Diet and really pulling white potatoes from my diet, I had to find an alternative. Sweet potatoes are fabulous without all the sugary stuff! I like them much better cooked with savory spices! But, since the age old debate is whether these little suckers are meant to be candied or not...I am including both!
Garlic Mashed Sweet Potatoes
3-4 sweet potatoes
3 garlic cloves
3/4 tsp salt
1/4 tsp pepper
2 tablespoons of butter or ghee
Wash potato skins. Wrap potatoes in foil. Preheat oven to 400F. Bake for 1 hour or until they are slightly soft when you squeeze them. Remove from oven and allow to cool for a few minutes. Gently cut a slice in the skin and peel the skin off. Add the potato to a large bowl. Place the butter and the garlic into a small bowl and microwave for 1 1/2 minutes until melted and bubbly, pour into potatoes, add salt and pepper and stir well to combine. Keep warm covered with a plate, serve warm!
Honey Glazed Sweet Potatoes
2 sweet potatoes (enough to serve the kids & my sweet loving hubs)
1 tsp cinnamon
1-2 tablespoons raw honey
Wash potato skins. Wrap potatoes in foil. Preheat oven to 400F. Bake for 1 hour or until they are slightly soft when you squeeze them. Remove from oven and allow to cool for a few minutes. Preheat oven to 375F. Gently cut a slice in the skin and peel the skin off. Slice potatoes into 1-2 inch slices and place into an oven safe dish. Sprinkle with cinnamon and drizzle the honey all over them. Place on top rack of oven and bake for about 15 minutes or until they begin to brown just a tad. Serve warm!
