Pineapple Coconut Black Bean Quinoa Casserole

Pineapple Black Bean Coconut Quinoa!

So good I am making this again tonight! I made this up for a Hawaiian Themed Teacher's Lunch but it turned out so good I had to have my own batch!

What you need...
1/2 onion, diced
1/2 red bell pepper, diced
~2 tsp olive oil
1/4 tsp cumin
1/4 tsp paprika
1/8 tsp turmeric
14 oz. can Coconut Milk, shaken
15 oz. can black beans, rinsed and drained
12 oz. package Quinoa, rinsed
20 oz. can pineapple chunks in juice (no sugar added)
~2 tbsp fresh cilantro, chopped
2 whole green onions, chopped
salt to taste, optional

Add onion and bell pepper to a large pot, drizzle with olive oil and turn to high heat. Add in spices and sautΓ© for about 3-4 minutes, stirring often until they begin to soften and turn translucent. Meanwhile, combine the juice from the pineapple & coconut milk, reserving pineapple chunks. This should equate to about 3 cups of liquid. You will then add water to reach a total of 4 cups liquid. Add the coconut milk, pineapple juice, water mixture to the pot, scraping the bottom to deglaze any bits. Pour in black beans and quinoa, stir to combine and bring to a boil. When it reaches a boil, turn to simmer/low, cover and allow to cook covered for about 15 minutes. Remove lid, if it is not completely cooked to a fluff and liquid completely absorbed, cover and cook 3 minutes longer. Stir in pineapple, onion and cilantro and serve warm! 
🐟Quinoa is a complete protein all on it's own, but it pairs nicely with grilled fish, πŸ—honey balsamic chicken (see recipe in comments) or grilled pork tenderloin!

πŸ₯—I used it in ALL of my salad dressings and marinades! It gives wonderful tang and flavor to any salad!

πŸ₯—One of my favorite ways to use it is to cut a store bought salad dressing! Look for one that has good, clean ingredients first...no added sugar and as short a list of ingredients as possible! Then I add my salad to a container with a lid, add 1 tbsp. dressing + 1 tbsp. ACV, close lid and shake! This gives you the ACV benefits, cuts down on the dressing and gets that whole salad evenly coated with yumminess! πŸ˜‰

Melon Salad with Mint Lime Dressing

Y'all, I love my herbs! I love the freshness they add and there are SO many health benefits to them! They don't get nearly enough recognition! Getting my garden in the ground has me really pumped about my herbs, so I am trying to add more Herby Recipes to my mix! ;)
Mint - Mint is cooling and palate cleasning! It's great for your breath and your digestive system! It settles your tummy and promotes digestion! It can help with headaches, opening up your sinuses and even warns off mosquitos! It is very day to grow and does well in a large pot because it likes to takeover, full sun to part shade!

πŸ‰Melon Salad with πŸƒMint Lime Dressing! πŸ˜Š
What you need...
2 cups Watermelon chunks
2 cups Honeydew melon chunks
1/2 cucumber sliced
1/2 cup feta cheese
the juice of 1 lime
2 tbsp good virgin olive oil or avocado oil
handful of fresh mint, chopped
a dash of pink salt
Mix first four ingredients together gently to create a nice salad. Combine remaining ingredients in a jar and shake well, or use a indi blender to make the dressing. Pour over salad and toss! We are having this with Balsamic Grilled Chicken! YUM!

Slowcooker Chicken Fajitas


No time for Taco Tuesday? Problem Solved! -->

Slowcooker Chicken Fajitas
3 chicken breast on the bottom
sprinkled with 1/2 tsp ancho chili powder
1/2 tsp chipotle season
1 onion sliced
1 red bell pepper sliced
1 green pepper sliced
1 pint mushrooms, wiped clean and sliced
Turn to High for about 3-3.5 hours. Using tongs scoop out cooked veggies into container, then grab chicken and shred with tongs. Add to GF, Low Carb tortillas or Lettuce wraps with salsa, sliced avocado, and a touch of greek yogurt! Boom!
