Blue Cheese Crostini Appetizer (variations)

Back in the day, when I used to manage showrooms that sold Viking, Wolf, Meile, etc. appliances, we would host in house dinners with professional chefs and put those awesome appliances to use.  I learned at lot from the professional chefs and even from some of our reps.  This is a recipe that I learned during that period of time that I will NEVER forget!  Definitely a keeper and a treat!  I don't make this often anymore, ahhh the bread...but every now and then, if I am planning a splurge dinner....this is ON IT!  It sounds crazy...but I promise you won't regret it....or maybe you will...because you. just. can't. stop!!!!!

What you need...
1 french loaf or boule, slice into 1" slices
1/4 cup ghee, butter or olive oil
1/2 cup blue cheese crumbles
1/4 cup brown sugar

Preheat oven to Broil.  Lay the bread slices on a baking sheet.  Spread a little butter or olive on each slice.  Sprinkle about 1 tsp blue cheese on each slice.  Using a teaspoon, sprinkle a little brown sugar around on each slice, enough to make a small layer on top of the blue cheese.  Place in oven and broil; for 5 minutes, DO NOT WALK AWAY!!!!  You just want to cook it long enough to melt the butter or ghee and cause the brown sugar to caramelize and bubble...then it's done.
Don't forget to put a couple pieces away so you can hide in the closet later with them. ;)

What you need!

Spread on a small bit of butter, add 1 tsp blue cheese to each.

Top with 1/2 tsp brown sugar each.

Broil 5 minutes or until brown sugar is bubbly!

Makes a great side too!



Variations:
You can spread fig preserves on the bread before adding the blue cheese, yummers.
Another great addition is to add a slice of filet mignon on top for a really nice hors d'oeuvres platter!
