Turkey Day - Bright Broccoli

I was trying to think of a side that would pair well with Thanksgiving Day fare, but something FAST and easy that could be quick to the table once everything else was ready.  Although I am blogging the traditional crock-pot greens beans also, I wanted something lighter and brighter!  So I searched my fridge and developed this!  It was really delicious and would pair well with just about anything, but most of all the kids loved it and it was super FAST!

What you need...
~ 1lb. broccoli, washed and cut into large florets
1 cup mushrooms, sliced
1 tablespoon olive oil
2 tablespoons sliced almonds

Dressing
1 orange, zest & juice
1 tablespoon honey
2 tablespoons dijon
2 tablespoons olive oil
1 clove garlic, smashed and chopped
salt
pepper


This dressing is quick and easy to make ahead!  Combine all ingredients in a jar and shake it up!

Place the broccoli into a microwave safe container with a lid.  Add 1/2 cup water, cover and microwave for 4 minutes.  In the meantime, add olive oil and mushrooms to a sautΓ© pan and cook on high for 5 minutes, tossing.  Add broccoli and cook tossing for 2 more minutes.  Add dressing and toss to coat, cooking for about 1 minute.  Turn into a dish and sprinkle with almonds!


What you need...

Add all dressing ingredients to a jar and shake!

While broccoli is cooking, add olive oil and mushrooms to a pan and sautΓ© on high for 5 minutes.

Add 1/2 cup water to a microwave safe container and cook for 4 minutes, covered.

Toss broccoli in with mushrooms and cook for 2 minutes.

Add dressing and cook for 1 minute, then turn into a dish and top with almonds.

Serve...
