Hawaiian Skewers

I hardly ever actually go into the grocery store, since I mostly shop online.  I walked in one day last week and they had a big display of ripe pineapples, you could just smell them!  And with Summer on my doorstep, I grabbed one up for a little grill out dinner!

We've had a  couple days of rain, but as soon as the skies opened up with sun and a little breeze, I was inspired to whip up this little Hawaiian dinner!  Since we had a little glitch with our Sunday Chicken this week (lol) I had taken a pork tenderloin out of the freezer and already had it in marinade!  From there...So, So easy...I prepped everything while the kids played in the yard and the grill preheated!  That's all the time it took!

What you need...
pork tenderloin, marinaded, cut into 1-2 inch chunks
1 pineapple, cut into 1-2 inch cubes
1 red bell pepper, seeded and cut into squares
1 pint whole mushrooms, cleaned
1 purple onion, cut into chunks

Preheat grill to medium-high heat, meanwhile chop all your veggies, pineapple and last pork.   Add to skewers.  Back Grill down to medium heat and grill skewers for about 20 minutes, turning everything 5 minutes!  Enjoy!






Once I skewered everything, I had some veggies left, so I added 2 zucchinis to them, tossed with olive oil, a splash of red wine vinegar and some fresh cracked pepper, shook those up and let them sit until the skewers were done, then hits them on the girl for about 5 minutes!
