Simple Sweet Potato Pancakes!
Talk about easy! I had a leftover baked sweet potato from dinner the night before! Tossed it into a bowl, whipped in 2 eggs (+ 1/4 cup egg whites), a dash of cinnamon! Heated my sautΓ© pan with coconut oil, cooked up some pancakes! We topped ours with pecans and a drizzle of raw honey! Delicious!
I had a whole potato, so I added a little egg white to thicken it! Use more of less depending on how much potato you have! With 1 whole potato, 2 eggs + 1/4 cup egg whites = 4 pancakes!
