Zucchini Noodles tossed with Tomatoes & Artichoke Hearts

This fast and light meal was easy to put together, so fragrant and yumtastic that we ate ALL of it, but filling enough to leave the meat out if you are vegetarian!


What you need...
1-2 chicken breasts, grilled, chopped into bite sized pieces
3-4 zucchinis, washed and spiralized
olive oil
salt/pepper
1/2 sweet onion, chopped
2 garlic cloves, chopped
1/2 cup bell peppers, chopped (any colors are fine, I like to mix it up with whatever I have leftover)
1 can of artichoke hearts in WATER, I like the quartered ones
a large handful of cherry/grape tomatoes
1 stem of fresh basil, chopped
1/4 cup feta cheese (optional)

Add onion, garlic and peppers to a large sauté pan, drizzle with a little olive oil and heat to medium/high heat.   Cook for about 3 minutes, then add zucchini noodles and season with salt and pepper.  Toss cooking for about 2 minutes.  Add artichoke hearts, continue to cook for about 1-2 minutes, add tomatoes, fresh basil and feta and turn the heat off.  Toss to combine and serve warm!  Add chicken or grilled shrimp!

What you need...

Add onion, garlic and peppers to a saute pan, drizzle with a little olive oil and heat to medium high heat.  Cook for about 3 minutes.

Add zucchini noodles and season with salt and pepper, toss and cook for about 2 minutes.

Add artichoke hearts.

Add tomatoes, basil, feta cheese turn heat off, toss and serve!


Add meat if you like!
