I know this isn't like super traditional Greek food, but still, Oompa!!! ;)
What you need...
- 3-4 chicken breasts, marinaded ahead
- your favorite caesar dressing, I like Simply Dressed or homemade(olive oil, red wine vinegar, anchovies, lemon juice, garlic, salt, pepper, egg yolks optional)
- romaine hearts (I use 1 per adult)
- artichoke hearts in water, quartered
- cherry tomatoes, halved
- small handful of Kalamata olives, chopped
- pepperoncini peppers
- garbanzo beans, rinsed
- feta cheese
- roasted red peppers
*the kids also get broccoli, carrots, and hard boiled egg
Marinade the chicken for a few hours, the longer the better. If you purchase dressing, pour some off into a container and dilute by half with vinegar or lemon juice, use this for your marinade. If you make your own, same deal!
Heat grill to high and burn off. Turn down to medium heat and add chicken. Grill chicken breasts for about 15 minutes, then flip and continue to cook on medium to low until you have reached an internal temp of 165+.
Chop chop, chop the romaine into tiny shredded bite sized pieces! Top with artichokes, tomatoes, a tiny bit of feta, pepperoncinis, roasted red peppers, garbanzo beans, olives and a small amount of dressing. I always measure my protein, so I add 3oz. of chicken to my salad and 4oz. for my hubs.
The kids get all the same, minus pepperoncinis, just no lettuce! They ALL completely cleaned their plates and had seconds! And apples with almond butter for dessert! (They did have some leftover grilled shrimp this time too).
Oh, I do love this salad, one of my top favs!
