Fresh Cherry Tomatoes & Basil Over Zucchini Noodles w/ Chicken or Shrimp & Feta

So, this was NOT on the menu...but I had some leftover spaghetti squash; that stuff is kind of expensive and I did not want it to go to waste, so I grabbed a few things I had on hand!  This literally took 10 minutes to prepare!  There's no denying how easy this is....even for someone who can't get cauliflower rice to turn out...lol, wink, wink!

*This recipe is equally as good with chicken or shrimp!

What you need...
1/4 cup chopped onion
3 cloves garlic, smashed
olive oil
Zucchini Noodles (what you seek this pic was 2 medium zucs - I usually do 2 per adult)
handful cherry tomatoes
1 grilled chicken breast (chopped up) or grilled shrimp
1 stem of fresh basil, washed and chopped
pepper
1/4 cup feta cheese

Toss the first 3 items into a saute pan, and turn up the heat - cook on medium/high until the onions and garlic begin to become translucent, about 3 minutes.  Add next 4 ingredients and generously top with pepper, stir to combine and continue cooking about 3 minutes, add feta, toss and serve!


All you need!

Saute onions and garlic in olive oil.

Add zucchini, tomato, chicken or shrimp, basil, top with pepper.

Toss to combine well.

Add feta...
OH SO YUM!
