Slaw - 3 Ways


Slaw....sounds boring and drab right?   Wrong!  We eat slaw often, almost once a week!  It's a great way to consume a variety of raw veggies!  Ever had butternut squash slaw?  It's a wonderful sweet and crunchy addition!  I even through a handful of spinach into mine most of the time to add some hearty green color!   Once you have a good basic recipe, there are tons of variations!


Basic Recipe
1/3 head of green cabbage, pulsed in the food processor
1/3 head purple cabbage, pulsed in the food processor
1-2 carrots shaved up with a veggie peeler
OR
1-2 bags slaw mix (produce section, NOT the kit with dressing included, just the cabbage/carrot blend)

*You can really vary the amount here according to what you prefer, or for color!  I like a lot of purple in mine because "Purple Slaw" is an easy sell to 3 little girls! ;) The severity of the chop is up to you too!  I like mine really chunky, but the kids like it spoonable!  Use your food processor to determine your chop!

Dressing
1 tablespoon honey
1/4 cup tablespoons olive oil mayo or greek plain yogurt
1/3 cup red wine vinegar

Place all ingredients into a jar and shake, shake, shake!  

Put everything into a big bowl with a tight lid, add dressing, stir, shake....refrigerate!
**Slaw is always best to me when it chills for a couple hours ahead***



Smokey Slaw*This is my ABSOLUTE favorite and fantastic in fish tacos, really any tacos, but especially fish/shrimp tacos!!!
Use basic slaw recipe but add 1 tablespoon chipotle in adobo chopped (or more if you are daring!)



Apple Slaw

Use basic slaw mix, but add 1 apple, sliced into match-stix! And sub Apple Cider vinegar for the Red Wine Vinegar!



Other variations to try...
Butternut Squash, jicama, spinach, even beets  Just run them through the food processor...pulsing until you get the consistency you want!
