SouthWestern Cauliflower Rice - 6 ingredient recipe




What you need...
2 bags frozen cauliflower
1 tsp olive oil
1 can fire roasted diced tomatoes, drained
1 cup cooked corn (I like Alexia Frozen)
1 cup black beans, rinsed & drained
large handful fresh cilantro, chopped
Green Chili Enchilada Sauce (I like Frontera, big flavor almost 0 calories and no sugar)
1/4 cup feta cheese optional*

Pour 2 frozen bags of cauliflower into a microwave safe container, add 1/4 cup water, cover.  Microwave for about 8-10 minutes or until steamed and soft.  Drain water off and mash well with a potato masher!  Leave uncovered for about 15 minutes so the steam can rise off and it won't get mushy!  HOLY EASINESS!!!!!

Add 1 tsp olive and cauliflower rice to a large sautΓ© pan, turn to medium high heat and cook for about 2 minutes, add tomatoes, corn, beans and continue to cook for 3 minutes tossing frequently. Once it is warmed through add cilantro, 1/2 cup green chili enchilada sauce (or more if you like), and feta.* Remove from heat, toss to combine, serve warm!
