Other awesome things about this recipe...the prep take less time than oven preheating...it's so easy my kids can do it...it's totally perfect for the vegetarian or the complete carnivore! It's very versatile! You can use the bean base, like I do...or use well cooked ground beef as a base! It fantastico both ways! And seriously....if the above picture doesn't make your mouth water...then I have no answers...
What you need...
Your favorite tortillas
refried beans
OR wilted spinach (base)
OR cooked, drained ground beef or turkey base
enchilada sauce (Again I love the Frontera Red Chile one)
shredded cheese
Toppings
black beans ( I like to cook a bag of frozen corn and mix with 1/4 cup salsa and a can of drained black beans as a topping)
corn
salsa
avocado
cilantro, chopped
onion, chopped
mushrooms, sliced
peppers, chopped
spinach
sausage
chicken
whatever!!!!
The Basic Recipe w/ Bean Base:
Preheat oven to 400F. Place tortilla on a lined baking sheet. Add about 1/4 cup refried beans, gently spread out with the back of a tablespoon. Make sure to spread so that the edges are a little higher than the center so that the enchilada sauce stays put! Top with enchilada sauce or wilted spinach first if you like. Add shredded cheese. Load on the goodness. Add any and all desired toppings. Bake on the top rack for about 15-20 minutes or until cheese begins to turn golden and toppings are cooked through! Remove from oven, allow to cool 5 minutes. Slice and serve!

I like to mix these as a topping... |
Cook the corn and toss with drained/rinsed beans and about 14 cup salsa... |
Add tortillas to a lined, lightly sprayed baking sheet, top with 1/4 cup refried beans or chosen base and spread with the back of a spoon... |
Top with enchilada sauce... |
Add cheese... |
Pile on the toppings... |
Bake at 400F for about 20 minutes or until toppings are cooked through and cheese begins to turn golden... |
Allow to cool for 5 minutes, slice and serve! |
