Try this, not that! So, I have posted a Garlic Mashed Potato recipe before...but this is WAY better! And sooooooo easy!
Everyone loves good ol' garlic mashed potatoes...I haven't met a potato I could resist. But these days I don't eat the white ones anymore. We stick to the lovely orange version, and these are fabulous!
What you need...
3 sweet potatoes
6-7 cloves of garlic
olive oil
salt
pepper
2 tablespoons of butter or ghee
foil
Preheat oven to 425F. Roll potatoes up tightly in a sheet of foil. Gently smash garlic cloves enough to remove the skin. Place in the center of a sheet of foil, drizzle with a little bit (1 tablespoon) olive oil. Pull corners up and twist tightly to contain. Place garlic and potatoes into the oven. Roast garlic for 30 minutes and potatoes for 1 hour or until they are softened when you squeeze them (please use an oven mit ;))
Remove from oven. Gently unwrap and slice skin of the potato with a knife. Peel the skin off and place the meat of the potato into a bowl. Add contents of garlic & oil, add butter while the potato is hot, 1/4 tsp salt, pepper to taste and mix, mix, mix...enjoy!
