Tarragon Turkey or Chicken Salad (using up turkey leftovers)

Every year, millions of people cook their turkeys at Thanksgiving and have tons of leftovers.  Yes, oh heck yes, I love a turkey sandwich slathered with mayo on fluffy white bread, but are there fantastic healthy alternatives?  YES!!!  

The dressing for this is CRAZY good, addictive, takes less than 1 minutes and only 4 ingredients!  It's perfect with chicken as well, makes for an elegant presentation and flavor profile!  I would put this up against most!  My kids love it too!


So, I had a turkey in the freezer taking up all my space.  I was trying to cook from the freezer this week, save some $ by turning over some of what we had on hand.  Just by looking at how much room that sucker was taking up and thinking of how many meals it could produce...Tom was at the top of my list!  I roasted him up, a simplified version of my old standard.  Roast Turkey.   This time I just used olive oil, and a little fresh Rosemary & Bay leaf from the yard!  In about 3 hours of passive cooking time, we enjoyed turkey with Sweet Potato, Apple, Brussels Sprout Bake for dinner! Yum! (Post coming today).  



And the next day....the leftovers made magic! Heehee... This is so yummy and EASY it will blow your mind!

Hint: I only used the white meat in this turkey salad, but it's fine to use both.  A roasted chicken or even a rotisserie chicken works just fine too!  I had about 1 half of the turkey breast left for this.

 What you need...
About 3 cups leftover roasted turkey or chicken, chopped into bite sized pieces
1/4 cup fresh tarragon
1/4 cup mayo
1 tablespoon fresh lemon juice
2 tablespoons apple cider vinegar
1 tablespoon honey
1 cup grapes, halved
1/2 apple, chopped
salt & pepper

Chop the meat into bite sized pieces and add to a large container with a lid.   Add grapes and apple.  Combine honey, vinegar, mayo and tarragon in a jar and shake well to combine.  Pouyr dressing over chicken & fruit.  Add about 5 turns of fresh salt & pepper, stir well to combine! Voila!

This is lovely alone or in a wrap!  Roll up in bib lettuce for a nice presentation!

What you need...

Leftover turkey...

chop it up into bite sized pieces...

chop half an apple into slices, then bites & half about 1 cup grapes... 
chop a nice pile of fresh tarragon...about 1/4 cup

Combine dressing ingredients and shake!

Add turkey (chicken), apples, grapes to a container with a lid and pour all that yummy dressing over!

Add a  few turns of fresh salt and pepper...

Stir well to combine...

SO Good!!!!!!
