The Menu - October 12-19

Breakfast
Veggie/Egg Muffins w/ salsa - this week I am using sausage crumbles, leftover asparagus & mushrooms & Roma tomatoes

Almond, Pumpkin, Mango, Turmeric, Spinach Smoothie as alternative for me

Greek Yogurt w/ Granola, berries, cantaloupe, banana, sausage/cheese muffins (made ahead), & Paleo Pumpkin Bars

Lunch
Adults: THE Lunch Salad
Kids: 
  • Proteins - Tuna sandwiches, turkey/cheese roll ups, boiled eggs, ham
  • Fruits - grapes, apples w/ almond butter, veggie mash-ups, clementines
  • Veggie - olives, pickles, carrots, broccoli (greek yogurt dip), green bean chips, veggie chips
  • Treats - yogurt pretzels, trail mix, yogurt raisins, fig bars
Afternoon Snack - kids

Frozen Kefir / fruit smoothie - trying to kick up their probiotics as we move into Fall!
  • Frozen blueberry, mango, peach, berry blend, banana, pumpkin blended with Almond Milk & Kefir
  • Gluten Free Ginger Snaps
  • Coconut Milk Pumpkin Ice Cream

Dinner

  • Flounder & Ground Beef Tacos w/ Smokey Slaw
  • Turkey Meatloaf with Green Peas & Roasted Butternut Squash 
  • "Pasta" Primavera w/ Chicken (or Shrimp)
  • Eggplant Pizzas
  • Southwestern Turkey Burgers w/ Smokey Cilantro Cauliflower Rice
  • Creamy Macadamia Shrimp over Zucchini Noodles
