Taco Nacho Meatzza

I've said it before and I will say it again...I LOVE Mexican Inspired food, Tex-Mex, South-West - ALL of it!  I am always trying to think up new Taco Tuesday pleasers and this one is fantastic and could not be easier!!!!

What you need...
olive oil cooking spray
2 lb. ground turkey (you could always use grass feed beef if you want, turkey is just much leaner and works well)
enchilada sauce (look for one does not have sugar in the ingredients)
1/2 cup shredded cheese
TOPPINGS!!!
black beans (rinsed & drained)
corn
jalapeños
can of diced tomatoes with peppers (drained)
avocado
olives
fresh cilantro, chopped (I LOVE a ton)
chopped baby spinach
shredded lettuce
salsa
sour cream or greek yogurt
ANY topping you like on your nachos works!!!!


Preheat oven to 400F.  Spray a 9x13 pan with cooking spray, liberally; turkey is very lean and can stick!    Turn your meat into the pan and press down to one thin, even layer. Bake for 25 minutes.  Remove from oven and spread enchilada sauce over the top.  Sprinkle cheese over sauce, then pile on the toppings!!!!  I like to put the tomatoes, beans and corn on first and then all the green things on top of that!  No real reason I guess, probably just aesthetics! ;)

Return to oven and bake for 15 minutes.  Remove and slice into squares, serve with shredded lettuce, salsa and sour cream or greek yogurt!!!

What you need....

Press it down!

Bake for 25 minutes at 400F

Spread on the enchilada sauce...

Load on the toppings...

More, more, more veggies...

Bake for 15 minutes!

Enjoy with shredded lettuce, salsa and sour cream or greek yogurt!
