Quick Fix Mini Pizzas

This is not a gourmet meal....but the kids sure do like it and it's much better than the alternatives!

These are probably ingredients you already have around, maybe minus the gluten free english muffins,  but....those hold in the fridge or freezer well, so you should!  And My son prefers this on a tortilla.  I use the little fajita size for him...you know you have those in your fridge!!!  I keep the stuff for these on hand for nights that we are running behind and need something quick.   Literally 15 minutes to the table, and prep time is about as long as it takes to preheat the oven!


Okay so, you are going to look at these pictures and ask, "corn?"  Yeah...I don't normally list corn or black beans as a pizza topping, lol....but we were also making Mexican pizzas, you'll see in the next post!  And....2 of my kids saw them and had to have them...what they hay....I don't care...whatever floats your boat right?  It's not like it's jelly beans...I might have let him do that once too though, heehee....

What you need...
Gluten Free English Muffins, I like the Rudi's...I actually think the Gluten Free are even better in this than the conventional ones!
OR Tortillas
Pizza Sauce or Marinara - I used regular pasta sauce last night since it's what I had!
Shredded Cheese
Toppings - pepperoni, sausage, mushrooms, olives, onions, peppers, spinach, etc.

Preheat the oven to 400F and line a baking sheet with foil.  Slice English muffins in half.  Place English muffins and/or tortillas on the lined baking sheet.  Top with pizza sauce or marinara.  Sprinkle with cheese.  Pile on the toppings.  I have found that if I let them kids do this part themselves...they are definitely into it and eat every single morsel.  Place on the top rack in the oven and bake for 10-15 minutes, or just until the cheese begins to start turning a bit golden.  Remove, allow to rest for 5 minutes, slice and serve!

Sit back and watch them pound these, while hoping they won't eat it all....so that you can get the leftovers, ;)....

What you need...

Place the English muffin halves or tortillas on a lined baking sheet...

Spread with pizza sauce...

Top with cheese...

Pile on the goodness, the kids love to "decorate" theirs...

Bake at 400F for about 15 minutes or just until the cheese barely begins to golden...

Serve with a generous portion of fruit!

YUMMMMMM!!!!!!
