Roasted Asparagus - The EASIEST and most versatile side item

Asparagus.  Asparagus is a super healthy veggie!  It is an anti-inflammatory, packed with vitamins and nutrients including antioxidants, tons of vitamin K and folic acid and contains inulin, a prebiotic that assists in digestive health.  So, not only does it help to reduce markers for cancer but it helps get your digestive system moving too!!!  But, one of the best things about asparagus is how easy it is to prepare!  It's kind of like the saying, the best exercise for you, is the kind you are most likely to do!  Well, the best veggie for you is the kind you are most likely to cook and eat!  Asparagus couldn't be more simple...and it pairs well with just about anything!

I love how easy it is to prep ahead, pop in the oven or sauté pan for a few minutes and serve!  I like to wash it, trim the woody bottoms off and wrap it up in plastic wrap with olive oil and salt & pepper.  Put it in the fridge wrapped up like this until you need it.

Place it in an oven safe dish and roast at 425F for 10 minutes!  Serve...that's it and it's perfect every time!

Need to step it up a notch?  Sprinkle it with a tablespoon of blue cheese crumbles, or the squeeze of an orange!

Another option is to grab the wrapped and oiled bunch and add it to a sauté pan with some sliced mushrooms, sauté for 5 minutes!

Trim a bunch, place it on plastic wrap, drizzle with olive oil, sprinkle salt and pepper and wrap it up tight.

Now it's ready to go whenever you are!

Oven roasted at 425F for 10 minutes.
